All you can think about is getting under the covers to rest and start preparing for a new day. As you enter your home, you smell a familiar and delicious scent that envelopes you with comfort and many happy memories. There’s adobo waiting for you at the dining table.

If you could name one food that’s synonymous to iconic in Filipino cuisine, your answer probably would be adobo. It’s one of the most decorated dishes in Filipino culture and is perfect for serving on practically any occasion.

Because of its ubiquitous nature, it’s not surprising that you associate the adobo with many heartfelt memories, no matter how big or small. It could be that comforting dish that pleasantly surprised you after a long and tiring day, or it’s your mom or grandma’s special recipe that she likes to cook during family reunions.

The great thing about adobo is it’s easy to make. Almost all of its ingredients are readily available in your kitchen, and it’s not difficult to find the ones that aren’t in your nearest grocery. It’s also versatile to prepare, having many variants such as adobong puti, adobong daing na bangus, and beef adobo, among others.

In this post, though, we’re going back to the basics but with a creamy twist! Here’s how to make your classic Creamy Chicken Adobo that will put a smile on your family’s face.

Tips to Keep in Mind

Now that you’ve got your hands on this tried-and-tested recipe, it’s time to refine your cooking with these tips.

  1. Know the type of meat you’re using (e.g., chicken, pork)

Adobo can be made with any meat, meat substitute, or vegetables. This may seem like it’s the sauce and cooking style that you want to perfect.

However, you should also pay attention to the meat you’re working with, as well as the cut. It’s all essential to maximizing the flavor of your dish. Mastering chicken adobo is an excellent place to start. You can begin experimenting with what other meats will yield as you go along in your cooking journey.

  1. Be mindful of your ratios

It’s easy to tweak and make different versions of adobo by varying your ratios of sauces and meat. This also means it’s easy for an ingredient to overpower another, even if that’s not your intention.

Once you’ve got the ratio of your meat, vinegar, and soy sauce down pat, you can add in the extras to give your adobo its signature taste. Remember: How you prefer your adobo to taste like can only be decided by you. Have fun in the kitchen, and see where your ratios will take you.

  1. Consider marinating the meat

If you have extra time to prepare, marinating your meat can be an alternative first step to making sure it absorbs all the flavor and attains its sour and savory taste. This will open up more possibilities for the dish and unearth a different version with a stronger flavor. This style is perfect if you want to spice things up or take your cooking up a notch for a special occasion.

  1. Cook with a cover and in low heat

Like this recipe suggests, only simmer and cook on low heat. You don’t want the sauces to dry up and serve dry adobo. The time you cook can be adjusted, and it would all depend on your chosen meat, so be mindful when you’re working with something else other than chicken.
